July 4

💥Happy July 4th💥

The city of Dunedin organized a fourth of July bike parade this morning on the Pinellas Trail. Participants just had to show up with decorations (or not) and ride from Curlew to Downtown.

We had a couple of 15-minute showers. Huge downpours and then . . .

. . . 15 minutes later, more sunshine!

86 degrees when the sun was shining and 82 when it rained.
Wind 10-12 mph

I biked downtown twice today, once alone and once with John. There were lots of people out, but it wasn't as crowded as the causeway and beaches. We got caught in the rain coming home during the last mile. We were soaked but it felt good.

On our afternoon walk around the neighborhood, we looked up in the sky and saw a plane with a banner. I was a little afraid to look. But to our surprise, it said, "Happy July 4th Dunedin." It was on its way to the causeway and Honeymoon Island.

We had Chilean Dal for dinner.
This recipe is from my niece. It won a New York Times competition for the least expensive and best tasting meal. Rich in protein. John says he never looks forward to it when I make it, but then he tastes it and loves it.

lentils 2-3 cups
onions 1 small, diced
garlic 3 cloves, minced
carrots 2-3 sliced
baby Yukon potatoes 2 cups
cumin 1 tsp
fire-roasted tomatoes 1 16 oz. can
tomato sauce 1 16 oz. can
(optional: add a sprinkle of crushed red pepper)
topped with cilantro and served over rice
Add red wine vinegar at the table
(optional: top with avocados)

Saute onions and garlic in olive oil, add cumin
Add cooked carrots, potatoes, and tomatoes; cover with water and cook until potatoes are done
Add cooked lentils and tomato sauce.

Do you see the little white dot to the right of the palm tree? That's the moon rising from our last walk last night with Dee Dee on the trail. She had another good day, as did we.
