Monday

 

We tried this new dish tonight: Beans, bulgur and kale. We added avocado and a can of stewed tomatoes. 

It makes for a pretty meal. Someday, we're going to get new dinner ware. We're both tired of the brown stoneware from Blue Bottle.

We did a search for recipes using bulgur.

We added a lot more kale than the recipe asked for, added stewed tomatoes, substituted chipotle salsa and paprika for the liquid smoke. We bought the huge bag of shredded kale and used about half of it. The bulgur is hearty and satisfying. It absorbs whatever flavor is in the dish. This recipe is another winner for us. Healthy and nutritious. 

We drove to the causeway to walk. We continued our recent practice of jogging over the bridges to add some HIIT (High Intensity Interval Training) to our workout. After lunch, I rode down the Pinellas Trail to Weaver Park and did some stretching and yoga and then lifted weights. I think I'll sleep well tonight.
