Another gorgeous day, a high of 76 degrees and sunny skies. It almost makes us forget about our very cold January when we had to wear long johns and multi layers on top.
John went jogging and I rode my bike to Clearwater. On the way back, I took the scenic route along Edgewater Drive.
I stopped at the Dunedin marina to take in the sights.
If you look closely in the picture above, you'll see the collapsing seawall. When the hurricanes came through, they blew water into the marina and then sucked it out. When it sucked the water out, it pulled down the eastern edge of the seawall.
You can see in this picture it pulled the wall, the sidewalk, and half of the length of a parking space into the water. It's going to take a lot of time and money to fix the marina. Many of the docks are ruined too.
The main dock at the end of Main Street is still a mess. It's going to take time to get things back to normal. In the meantime, the Ferry to Clearwater has been suspended.
I stopped at Weaver park on the way home to stretch and lift weights.
We fixed Garlic Tomato Basil Chicken for dinner.
We had some baked zucchini left over so we threw that in. We put it all on a base of rice. We decided that it's better without the rice. The zucchini was okay, but I liked the simplicity of the original recipe. The key is to use great tomatoes, not grape tomatoes. We used Camporini which are as flavorful as cherry tomatoes but larger.

ReplyDeleteSorry about the damaged seawalls. I am preparing your red beans and rice for dinner tonight. Dad likes all the ingredients. YEAH! I like the looks of this recipe too. Will add ingredients on next grocery list. Thanks for including your recent recipes. They sound good and especially interesting because they come from you. I recall how much fun cooking with you was in recent years.
